米其林星級評比是根據評審員匿名就餐訪案的結果，這些評審員會像一般顧客一樣到餐廳用餐。
評審員受到嚴格要求，連對家人或密友都不能透露自己擔任米其林的評審員；如此一來，才能避免餐廳為他們提供特殊待遇。
就餐後，米其林主管會和各區小組開會，確定頒發的星級。
大部分獲得評比的餐廳都是零星級，只有少數幾家能得到認可。
此外，評審員也會造訪已經獲得星級的餐廳；如果認為餐點品質下滑，就會撤銷該餐廳的星級。
米其林還會給頒發其他獎項；「必比登推介」表彰提供優貨食物的平價餐廳。
「米其林餐盤」則表彰那些不足以獲得一星但仍值得一提的餐廳。
而「米其林綠星」則只頒給至少獲得一種米其林獎項的餐廳；意在表揚餐飲業者超越卓越，以永續方式於倫理道德暨友善環境層面的經營。
《米其林指南》的高標準確保了在未來，他們仍將持續引領民眾享用優質美食。
Michelin also offers other awards. The Bib Gourmand award recognizes restaurants with great quality food and low prices. The Michelin Plate recognizes restaurants that are not quite good enough for a star but still deserve an honorable mention. And the Green Star is only given to restaurants that have at least one other award. It honors restaurants that go above and beyond to operate in an ethical and environmentally-friendly way.
The Michelin Guides' high standards guarantee that they will continue directing people to excellent food for years to come.
